The Forme of Cury: A Roll of Ancient English Cookery Compiled, about A.D. 1390

The Forme of Cury is the oldest substantial English cookbook, a parchment roll of nearly two hundred recipes compiled around 1390 by the master cooks of King Richard II. This is the edition the antiquary Samuel Pegge prepared in 1780 from the roll then owned by Gustavus Brander, with a preface, notes and a glossary. The recipes, in Middle English, run from pottages of beans, cabbage and gourds through hares, rabbits, chickens and geese in sauces of wine, ginger, saffron and almonds to blanc manger, tarts, fritters and the showpieces of a royal feast. Pegge adds a second manuscript of the same age from his own collection, making the volume a primary source for medieval cookery. The full text is available to read online in your browser on Vinteuil, and the first chapter is free.
