Science in the Kitchen

by E. E. Kellogg

A Scientific Treatise On Food Substances and Their Dietetic Properties, Together with a Practical Explanation of the Principles of Healthful Cookery, and a Large Number of Original, Palatable, and Wholesome Recipes

About 13 h 55 min of reading827 chapters

Science in the Kitchen, first published in 1892, is Ella Eaton Kellogg's cookbook and manual of dietetics from the Battle Creek Sanitarium, where her husband John Harvey Kellogg preached a vegetarian regimen of grains, fruits and simple cooking. The opening chapters explain the chemistry of foods, digestion and the principles of what she calls scientific cookery; a section on the household workshop proposes kitchen furniture and labor-saving arrangements; and the bulk of the book is given over to recipes, grouped by cereals, breads, vegetables, fruits, legumes, soups and desserts, with "Table Topics" of quotations and advice between them. Meat is absent and condiments are suspect. The book is a document of the American health-reform movement as much as a cookbook. The full text is available to read online in your browser on Vinteuil, and the first chapter is free.
