The Cook's Oracle; and Housekeeper's Manual
William Kitchiner, a London physician of independent means, published The Cook's Oracle in 1817 and revised it repeatedly; this American edition, adapted from the seventh London edition, appeared in New York in the 1830s. Kitchiner claimed that every receipt had been tested in his own kitchen and that quantities were stated by weight and measure, a novelty at the time. The book opens with essays on invitations to dinner, manners, carving and friendly advice to cooks and servants, then gives the rudiments of boiling, roasting, frying and broiling before several hundred receipts for broths, gravies, soups, sauces, meats, vegetables, puddings, pickles and preserves. It is cheerful, opinionated and practical. The full text is available to read online in your browser on Vinteuil, and the first chapter is free.
