The Boston cooking-school cook book
The Boston Cooking-School Cook Book, first published in 1896, is the manual from which generations of Americans learned to cook. Farmer, who directed the Boston Cooking School, insisted on level measurements with standard cups and spoons and on exact times and temperatures, so that a recipe would come out the same in any kitchen. The book opens with chapters on food, cookery and the composition of ingredients and goes on to more than a thousand recipes, from breads, soups and chowders through fish, meat, vegetables and salads to pies, cakes, frozen desserts and confections, with menus and notes on serving. Later editions were revised many times; this original shows the plain New England cooking from which the Fannie Farmer tradition began. The full text is available to read online in your browser on Vinteuil, and the first chapter is free.
