The Book of Household Management
Isabella Beeton was twenty-five when The Book of Household Management appeared in 1861, assembled from the monthly parts she had written for her husband's Englishwoman's Domestic Magazine, and she died four years later. The book outlived her as the bible of the Victorian middle-class home. Its more than two thousand numbered entries give recipes for everything from soups and sauces to game, puddings and invalid cookery, each with cost, time and seasonality, together with chapters on the duties of the mistress and the housekeeper, the arrangement of dinners, marketing, the management of servants from the butler to the scullery maid, the care of children, domestic medicine and the law of the household. Much of it was borrowed, and all of it was organized. It is available to read online in your browser on Vinteuil, with the first chapter free.
