The Pantropheon; Or, History of Food, Its Preparation, from the Earliest Ages of the World
The Pantropheon, published in 1853 under the name of Alexis Soyer, the French chef of the Reform Club who later organized army kitchens in the Crimea, is a history of food and eating in the ancient world. It moves from the earliest ages through the Hebrews, Egyptians, Greeks and above all the Romans, describing the cereals, breads, vegetables, fruits, meats, game, fish, shellfish, wines and sauces they consumed, the fabled dishes of Apicius and the banquets of the emperors, the furniture of the dining room, the service of the table, the cooks and their status and the laws against luxury. The book draws on Athenaeus, Pliny, Petronius and other classical writers and is illustrated with engravings of ancient kitchens, vessels and feasts. It is available to read online in your browser on Vinteuil, with the first chapter free.
