Alexis Soyer was the French-born chef of the Reform Club in London, and The Gastronomic Regenerator, first published in 1846, is the cookbook in which he set out his kitchen in full. It contains nearly two thousand numbered recipes, beginning with brown sauces, veloutés and flavored butters and moving through soups, fish, roasts, entrées, game, vegetables, pastry, jellies and creams, many of them given in both elaborate and economical versions. Soyer also describes his own kitchen at home and the celebrated kitchen of the Reform Club, and adds a memorial to his late wife, the painter Emma Soyer.
